Whilst summer is fading away, you can keep the sunshine vibes going through a vitamin packed juice. These are an amazing way to get a quick vegetable and nutritional boost, as well as being super tasty!
Beetroot is my absolute favourite for having in juices. It’s sweetness works perfectly alongside the bitterness of the kale, and the carrot helps to add some extra depth. Finally the inclusion of lemon and ginger give this juice an extra zing.
- 1 beetroot, vacuum packed
- 2 carrots, peeled
- 1 cup of kale, stalks removed
- 1/2 cup of apple juice*
- Lemon juice
- Ginger, 1/2 an inch, sliced
- Slice of lemon to garnish (optional)
*apple juice can be replaced with crushed ice
If you have a nutribullet you can just throw in all your ingredients and you’re done! Unfortunately I don’t have one, so still make juices the slightly old-fashioned way.
Chop the beetroot and grate the carrots. Put these in a blender with all of the other ingredients and then blend until a smooth juice and garnish with a slice of lemon. Easy really!
NB: do add more lemon & ginger to suit your taste. A bit of black pepper, or even a dash of chilli is also nice!
